A recipe for that last ripe banana sitting in the fruit bowl

Hey curious cooks! Hope you guys have been keeping warm during this cold weather lately! So I made banana and cinnamon pancakes today because I had one ripe banana left over and it was too ripe to eat (well for me anyway) and I didn't want to waste it! I decided to make some fluffy pancakes with it 🥞🤗 You can double this recipe to make more but I made 5 pancakes from this one banana and that was plenty for me!
For this sweet treat you are going to need; a ripe banana, plain flour, baking powder, bicarb soda, sugar, salt, buttermilk, egg, butter.
First, mash the banana in a bowl, then add all the wet ingredients and mix well
Next, in a seperate bowl sift all the dry ingredients together, give it a mix and then add it to the wet ingredients.
When you mix the batter, make sure you don't over mix it. You want the batter to still be lumpy and airy. If you over mix it, you are going to have flat pancakes. Let the batter sit for 5 - 10mins while you get the pan ready.
Heat the pan on low-med heat. You know the pan is hot enough when you add the butter and it sizzles (but you can always test it with a small dollop of batter). Once the butter is melted add the batter to the pan. I used a 1/4 cup so I got the same size pancakes.
Cook the pancake for 2 - 2 and a half mins or when you start to see little bubbles form on the top. Once the bubbles appear, use a spatular and flip the pancake. Cook on that side for another 2- 2 and a half mins. Repeat until all the batter is used.
Stack the pancakes up and then you are ready to eat!
Serve with maple syrup, ice cream, fruit, whatever you feel like!
I ate mine with some homemade strawberry jam!

Banana & Cinnamon Pancakes
Makes 4 - 5 pancakes depending on size
Ingredients
Dry:
1/2 cup plain flour
- 1/2 tsp of ground cinnamon
- 1/4 tsp of baking powder
- 1/4 tsp bicarb soda
- 1 tsp sugar
- 1/4 tsp of salt
Wet:
- 1 ripe banana mashed
- 1/4 cup butter milk
- 1 egg
- 1 tbsp melted butter
- extra butter for cooking
Method
1. In a bowl, mash the ripe banana, then add all the wet ingredients and mix well. Set aside.
2. In a seperate bowl, sift together all the dry ingredients
3. Add the the dry ingredients to the wet mixture and careful mix together, don't over mix the batter because you want to keep the mixture airy. The batter should look lumpy, not smooth. Let batter rest for 5 to 10mins
4. Heat a pan on low-medium heat. Add a dollop of butter to the pan and it should sizzle a bit. Make sure the pan is covered with the butter and then add the batter to the pan, cook until the bubbles start to form on the top.
5. Flip the pancake and cook for another 2mins. (Do not push on the top of the pancake, this will make it flat)
6. Repeat until all the batter is used. Stack the pancakes on top of one another and serve with anything you want! 😃✌️
