Crispy Chicken Schnitzel 🍗

Helllloooo curious cooks! 🤗 Today I am sharing my chicken schnitzel recipe. I love cooking this, its so easy to make, maybe a little bit messy but totally worth it! Jackson loves this recipe, but then again he loves everything I cook, I think he's just being nice... 🤔

What I love about making this is that you don't have to follow this recipe completely, you can change out the spices to create a different flavour profile. You can easily serve this with roast veggies, mash potatoes with gravy or even put it in a sandwich for lunch!! 🤩

For this recipe you will need; chicken breast, eggs, panko breadcrumbs, flour, salt, pepper, chill flakes, onion powder, garlic powder, smoked paprika and dried oregano. You can change out the herbs and spices to whatever your hearts desire! 😃 I just stuck with a couple to make it simple.


So first thing you want to do is start setting up a little production line, get organised 😉

Put the panko bread crumbs in a bowl or shallow plate, add the spices and give it a mix.



Next, in a separate bowl, beat the eggs well. On another plate, put together the flour, salt and pepper. Your line should be looking like this once you are done 👍Leave that to the side while you work on the chicken.



So, I like to butterfly the chicken breast and then roll (or hit it) out with a rolling pin to flatten it a bit, this way the chicken will cook nice and even. Usually I would keep the size this big if I was having dinner and each person would have one chicken breast each but when I made this it was lunch time, and I felt like having a sandwich so I decided to cut the piece in half so it would fit between the bread. 🥪

Now, the messy part! You start by coating the chicken in the flour, then you drop it into the eggs (make sure you coat it very well), and finally into the breadcrumbs! Repeat this step until all the chicken is crumbed. I tried to use a fork so my hands didn't get too messy, kinda worked.. 😝


Once you finish that, put the pan on the stove at a medium heat and add a couple tbsp of oil. Note: If the heat is too hot, the crumbs will burn and the chicken will not cook inside properly.

So as you cook the chicken pieces, the oil will absorb into the crumbs and when the pan gets a little bit dry, just add more oil to the pan. Cook the chicken for about 5 - 8 mins (depending on how thick the chicken is) on each side until golden brown.






Voilà!! You are finished, crispy chicken schnitzel! So delicious and it stays really moist and juicy! I made a fat sandwich with the schnitzel, it had cheese, salad greens, avocado, cucumber and bbq sauce! 🤤It was so tasty!!

Crispy Chicken Schnitzel

Serves 2 - 4 people

Ingredients:

- 2 chicken breast

- 2 eggs

- 2 cups panko bread crumbs

- 1/2 cup all purpose flour

- 1 tsp salt

- 1 tsp pepper

- 2 tsp chilli flakes

- 2 tsp smoked paprika

- 2 tsp garlic powder

- 2 tsp onion powder

- 2 tsp dried oregano

- oil to fry


Method:

1. In a shallow bowl, mix together the breadcrumbs, chilli flakes, paprika, garlic powder, onion powder and oregano. Set aside

2. In a seperate bowl, beat the eggs well so it is combined. Set aside

3. In another bowl, add the flour, salt and pepper. Set aside

4. Butterfly the chicken, and then roll it out with a rolling pin until it is flat and the thickness is even throughout the whole piece. If the pieces of chicken is too big, you can cut it into smaller pieces

5. To crumb the chicken, first coat the chicken in the flour, then dip it in the egg and finally put it in the crumb. Ensure the chicken is fully covered with the crumbs.

6. Heat a pan on medium heat and add oil. Fry the chicken, for 5 - 8 mins on each side until golden brown. (Time may vary depending on thickness of the chicken). Repeat for all chicken pieces.

7. Take the chicken out of the pan and serve with roast vegges, mash potatoes or make a sandwich with it. 😀
