Crockpot Curried Sausages

Simple, cheap and easy recipe for those lazy days where you want to do minimal cooking šŸ˜

Hey curious cooks!! Hope everyone has been well and been doing plenty of cooking šŸ˜ƒāœŒļø


Let's talk about crockpots shall we? Crockpots are such a great appliance to have in the kitchen, they come in different types and sizes so you can pick one that is suitable for you and your family. You can make so many things in them and the best part is; you just put all the ingredients in and let it do its thang for hours while you go chill out, play some games, have a nap or whatnot šŸ˜‰


I used to have a large oval crockpot back when I lived at home but when I moved out, I was living alone so I didn't want such a big crock, so I bought a smaller one that did take up so much space in the cupboard.


This dish is perfect on a nice cold day, a day where you feel like sitting on the couch snuggled up in your warm blanket, watching your favourite movie and then having a nice warm bowl of curried sausages šŸ˜Œ.... so so nice šŸ˜ŒšŸ˜ŒGood thing it is a cold day where I live today!! šŸ¤©šŸ˜Œ


Anyways! This recipe is cheap, quick and simple! There is only one cooking part but you don't even have to do it if you don't want to.. it's up to you! šŸ’ā€ā™€ļøFor this delicious meal we are going to need; sausages (any type you like, I used beef), potatoes, carrots, onion, garlic, curry powder, salt, pepper, stock (which ever one you prefer, I used beef), a dab of oil, cornstarch and water.



First things first, cut up all the veggies into medium pieces, don't cut it too small because it might get mushy since we are cooking it for awhile. I've kept the skin on my potatoes and carrots on because; 1. a lot of the fibre and goodness in the skin and 2. I don't like to waste food. You can definitely peel the skin off if you don't like eating, its completely up to you šŸ˜‰


Next, we are going to brown the sausages to give it some flavour, colour and texture. Put the pan on high heat, add some oil and sear the sausages on all sides.




Once it's got a nice brown/char to it, take it out and cut it into chunks. For each of my sausage I cut it into 3 pieces.

Note: you don't have to brown the meat if you don' want to but I highly recommend, it will definitely taste better if you do šŸ˜‰



Now the easy part šŸ˜Œ, add all the ingredients, except for the cornstarch and water into your crockpot and give it a good mix!


Then, pop the lid on, turn your crockpot on low and let it cook for 5 hours or you can set it for high for 3 hours. Cooking time will vary depending on your crockpot and how big you cut your veggies, but you can check on it from time to time, because some people prefer softer veggies and some people like a bit of texture to it.



I went to check on mine at 2.5hrs and oh my gawd! I wish you were there to smell it when I opened the lid, the smell was amazing! šŸ¤¤ It was such a beautiful aroma, with the steam coming up from the sausages and vegetables, it really set a nice warm scene because it was cold and gloomy outside šŸ˜…Anywho, because my crockpot is the tall cylinder type, I had to give it a quick stir so the food on top gets a turn at the bottom of the crockpot.


About 5mins before your cooking time is up, it's time to add the cornstarch slurry. In a small bowl, mix together the the cornstarch and water. Then add to the crockpot, give it a good stir to make sure everything is mixed and then cover for mins. This will thicken the stock and give you a nice stewy consistency. (I forgot to take photos for this step šŸ˜…)


Note: If your soup isn't thick enough just add more slurry until you are happy with the consistency. Start with 1 tbsp cornstarch and 1 tbsp water and build up from there.


Once you get the consistency you want, you are ready to serve this delicious curried sausages! You can also add some fresh chopped coriander on top to garnish but I didn't have any, but I am trying to grow some in the garden šŸ’ā€ā™€ļø


We ate our with a lightly toasted piece of bread, it was perfect to soak up the soupy stew, sooo much flavour and the vegetables we're perfectly cooked, you can cut through it with a spoon šŸ˜Œ

Crockpot Curried Sausages

Serves 2 - 4 people

Ingredients:

- 5 beef sausages

- 4 medium potatoes

- 2 medium carrots

- 1 onion

- 2 cloves garlic

- 2 cups beef stock

- 1 1/2 tbsp curry powder

- 1 tsp salt

- 1 tsp pepper

- 1 tbsp oil

- 2 tbsp cornstarch

- 2 tbsp water


Method:

1. Prepare the vegetables. Cut the potatoes, carrots and onion into medium size chunks. Crush the garlic cloves (you can dice it up or leave it whole), then leave aside.

2. On the stove, put the pan on high heat and add the oil. Once the oil is hot add the sausages and brown them on all sides.

3. After browning the sausages, cut them into 3 - 4cm chunks.

4. Into the crockpot add the; vegetables, sausages, stock, curry powder, onion, garlic, salt and pepper. Give it a good mix.

5. Set the crockpot on low for 5 hours or high for 3 hours. (You can give it a mix halfway through the cooking time if you have a tall crockpot)

6. About 5 minutes before the cooking time is done, mix a slurry by adding the cornstarch and water together in a bowl.

7. Add the slurry to the crockpot and give it a good stir. Cover with the lid for 5 mins and now your curry should be a thicker consistency.

Note: If you like it more thick then make more slurry and add to the crockpot, start with 1 tbsp of cornstarch and 1 tbsp of water and build up from there.

8. Serve in a bowl with a slice of toast or some rice. Garnish with fresh chopped coriander (optional). Enjoy! šŸ˜‰
